So, this is my last blog. This whole project has been a success in the making. I have learned so much from this project, and wish that I could continue this project. I hope that all of you guys that saw and kept update with my website liked it, and I hope that you keep using my meals. I learned that cooking is more than a hobby, its a passion. Creating this website was really challenging, but fun in the same way. It pushed me to do certain things I usually would not do. It gave me a way to share something I love to you guys. I learned that it takes patience to cook, and that it's not the easiest thing to do. In cooking, you fail sometimes, but thats okay. Cooking taught me that failing does not mean to give up, it means to get back up and try again. It taught me that you can cook almost everything. You have different varieties of foods you can cook, and eat. Cooking taught me to be creative and try new things. I cooked some food that I never thought was even possible. Cooking taught me to be aware of things. Cooking food needs to be watched carefully. If you do not watch the food, it can overcook and ruin your whole meal. Cooking also taught me to be safe. Anything can burn and catch on fire if you do not pay attention. You can also burn yourself if you do not use the right utensils to watch and cook the food carefully. Cooking also taught me the use of some new utensils. These utensils helped me cook and made the cooking easier. If I could go back the the beginning of these 8 weeks and correct anything I want, I would correct some of the stuff I cooked. Some of the stuff I cooked was not challenging enough for me, and I did not learn as much as I wanted to from a couple of the meals I made. Even though I will not be updating on this website anymore, I will still cook. Cooking is something I love and enjoy and something that I will continue to do.

This weeks meal is a mix between two of my favorite meals, chicken and tacos. This meal is fun for the whole family, and is very tasty. This meal is one of my personal favorites just because of all the taste and colors it brings. I hope you enjoy this meal, and keep up to date for more great recipes! Yield: 3 individual pizzas Ingredients For the Taco Seasoning: 2 tablespoons onion powder 2 tablespoons garlic powder 1 tablespoon chili powder 1 teaspoon dried o regano 1 teaspoon cayenne pepper 1 teaspoon ground cumin Kosher salt and freshly ground black pepper For the Pizzas: 1/4 cup canola oil, plus more for brushing 1 pound skinless, boneless chicken breasts 1 16 -ounce tube pizza dough All-purpose flour, for dusting 1 cup shredded mozzarella 1 cup shredded sharp cheddar 1 avocado Juice of 1 lime 1/2 teaspoon ground cumin 1/2 teaspoon chili powder 1 tablespoon diced red onion Kosher salt and freshly ground black pepper 1 cup fresh salsa 1/2 cup sour cream 1/4 cup chopped fresh cilantro Directions Make the taco seasoning: Mix all of the ingredients with 1 tablespoon each salt and black pepper in a bowl. Prepare the pizza: Mix 2 tablespoons of the taco seasoning and the canola oil in a shallow bowl. Pound the chicken between 2 pieces of plastic wrap to 1/4 inch thick. Add the chicken to the bowl, turning to coat, and marinate 30 minutes. Preheat a grill to medium high. Grill the chicken until cooked through, about 4 minutes per side. Let cool, then cut into bite-size pieces. Divide the dough into 3 pieces. Roll out each on a floured surface into an 8-inch round. Brush with canola oil, sprinkle with taco seasoning and grill until crisp, 3 to 5 minutes per side; remove from the grill. Mix the cheeses in a bowl, then sprinkle on the crusts and top with the chicken. Return the pizzas to the grill, and cook until the cheese is melted, about 5 minutes. Meanwhile, mix the avocado, lime juice, cumin, chili powder, red onion, and salt and pepper to taste. Top the pizzas with the avocado mixture, salsa, sour cream and cilantro. This weeks meal is based on a classic food that everyone loves, pizza. But, I have added a little twist to it! They are called pepperoni pizza pockets. They are great for parties, gatherings, dinner, or just hanging out with some friends. I hope you enjoy this delicious meal, and keep up to date with my site for more tasty foods! Yield: 4 servings Ingredients: 1 tablespoon olive oil, plus more for brushing 1/2 small onion, diced 1 clove garlic, minced 1 tablespoon tomato paste One 28-ounce can diced tomatoes 1/2 teaspoon sugar Salt and freshly cracked black pepper 4 to 6 leaves fresh basil, torn All-purpose flour, for dusting 1 pound pizza dough, divided into 4 balls 2 cups shredded whole milk mozzarella 12 ounces pepperoni, thinly sliced Grated Parmesan, to taste Directions: Preheat the oven to 400 degrees F. Heat the olive oil in a small saucepot over medium-low heat. Add the onions and saute until translucent, 2 to 3 minutes. Add in the garlic and saute for 1 minute. Add in the tomato paste and saute for 1 more minute. Stir in the diced tomatoes, sugar and season with salt and pepper. Add the torn basil leaves and bring to a slow simmer. Allow to simmer for about 15 minutes while you make your pizza pocket. Roll out the dough balls on a lightly floured surface into 4 equal rounds. On half of each round, layer some mozzarella, and then some pepperoni slices. Fold in half, covering the filling, and then fold the outer edges up and crimp the edges with your fingers to seal. Place the pockets on a baking sheet, brush with olive oil and sprinkle with grated Parmesan. Bake until golden, 10 to 15 minutes. Serve with the sauce on the side. This weeks recipe is about eating healthy. Eating salmon increases hair growth. It is super healthy for your body. Servings: 4 burgers Ingredients 1 1/4 pounds center-cut salmon fillet, skin and pin bones removed 2 tablespoons dijon mustard 1 tablespoon mayonnaise 1 tablespoon lemon juice 1/2 teaspoon grated lemon zest Pinch of cayenne pepper 2 scallions, chopped 1 cup plus 2 tablespoons panko (Japanese breadcrumbs) Kosher salt and freshly ground black pepper 2 tablespoons extra-virgin olive oil, plus more for brushing 4 brioche b. uns, split Tartar sauce and arugula, for topping Directions Cut three-quarters of the salmon into 1/4-inch pieces. Put in a large bowl. Cut the rest of the salmon into chunks; transfer the chunks to a food processor along with the mustard, mayonnaise, lemon juice, lemon zest and cayenne. Pulse to make a paste. Add the pureed salmon mixture to the bowl with the diced salmon. Add the scallions, 2 tablespoons panko, 1/2 teaspoon salt, and black pepper to taste. Gently mix until just combined. Line a baking sheet with parchment paper and brush with olive oil. Divide the salmon mixture into 4 mounds on the parchment paper. With damp hands, pat into 4-inch-wide, 3/4-inch-thick patties. Cover loosely with plastic wrap and refrigerate at least 30 minutes. Preheat the broiler. Spread the remaining 1 cup panko on a plate. Press both sides of the salmon patties in the panko. Heat the olive oil in a large nonstick or cast-iron skillet over medium-high heat. Add the patties (in batches if necessary) and cook until browned on the bottom, 3 to 4 minutes, adjusting the heat if necessary. Turn and cook until the other side is browned and the patties feel springy in the center, 3 to 4 more minutes. Transfer to a paper towel-lined plate to drain; season with salt. Meanwhile, arrange the buns, cut-side up, on a broiler pan and broil until toasted, 1 to 2 minutes. Serve the patties on the buns; top with tartar sauce and arugula I want to show you an easy recipe to make if you get home a little late and the kids are hungry. This meal is called pepperoni and cheese eggs. This meal is very tasty, and has an odd twist to it. I hope you enjoy!
